This advanced course is designed to allow students to explore their personal goals in the field of culinary arts and provide them with the opportunity to enhance their knowledge of the industry. In this class, students will create gourmet foods with artistic presentation, develop entire meals and unique dining experiences for school events and demonstrate their leadership abilities in a food related setting. Field trips include the FCCLA culinary competition and the National Restaurant Show.

Creative Cuisines 261 is a lab-based course where students develop advanced food preparation skills in culinary arts while also exploring USA regional cuisine and gaining global perspectives of international cuisine. As students prepare the cuisines of these regions, they will explore the food customs, local history and geography of each. Advanced culinary techniques, knife skills, meat preparation and high heat cooking are emphasized throughout this course. Pending Board approval.

This course introduces students to the development of the child from conception through the school-age years. Topics such as how to work well with children, developmentally age appropriate activities, components of development (social-emotional, physical, cognitive and language) development of children are discussed in addition to pregnancy related topics. The simulated infant (flour sack baby) and computer simulated infant are key learning experiences. Upon completion of this course students will earn a “Gateways ECE Credential Level 1”.

This practicum will provide students with an opportunity to observe, plan and direct activities of the Titan Tots preschool at Glenbrook South. Students will have the opportunity to use various forms of educational technology. A variety of preschool and child care experiences will be explored. Students will learn to master teaching skills in planning, creating, teaching and evaluating all areas of the early childhood curriculum. They will also learn classroom management in relation to discipline techniques. Students study early childhood theorists and apply theory while working in Titan Tots Preschool.

This course examines the theoretical and practical application of child development theories. The students become a lead teacher in the GBS Titan Tots Preschool. This is a one semester course that will allow students to explore teaching and related fields as a profession. Students can be enrolled in this course for up to four semesters.

This teaching internship course examines the theoretical and practical application of educational theories. The students extend and enhance skills as a teaching intern through a practicum experience in local elementary schools or daycare centers. Interactions with elementary educators in real-world applications provides a great advantage for students as they choose college and career options. Fashion 161 is an introductory laboratory course designed to combine hands-on experience with machine work for garment construction while integrating an understanding of fashion design with the use of sewing tools and machinery. Students will develop skills necessary for making clothing and personal accessories. Students are introduced to wardrobe planning, fashion trend forecasting, and the fashion design process. Students develop skills to create a digital portfolio that embodies their creativity and designs throughout the semester and showcase their work professionally. Students purchase materials and supplies independently. He/She is required to construct a flannel pant garment and one small choice project. Other sewing projects are determined individually between teacher and student based upon the student’s needs, interests and demonstrated ability.

Students continue to expand their digital portfolios by fashion blogging, sketching and adding their designs throughout the duration of the semester. Fashion 561 is the fifth fashion design course in the sequence. Students will continue to improve their sewing skills and incorporate more advanced skills including an introduction to pattern making. to enhance their garments while designing & sketching a 4-piece collection. Also explore their fashion identity and develop their brand’s concept. Introduction to draping using professional grade mannequins and transition to making their own patterns.
Students will continue to build their portfolios for college/employment opportunities, and will have the opportunity to plan an end of year fashion showcase.

Fashion 661 is the sixth fashion design course in the sequence. Students will continue to refine their sewing, pattern making, and draping skills. Also students will design & sketch a 4-piece collection that derives from their personal concept, and formulate a business plan based on their concept and vision. Students will create sample garments and showcase their unique designs as they continue to build their portfolios for college/employment opportunities, toward the minimum requirement of a 10-piece collection for most design schools. Also, students will have the opportunity to plan an end of year fashion showcase.

Fashion 761 is the seventh fashion design course in the sequence. Students will design their final 4-piece collection for their brand/label incorporating more advanced sewing skills. Also will continue to refine their fashion sketching, sewing, pattern making, and draping skills with independent focus on design strategies in enhancing their brand/label. Students will add to their business plan based on their concept and vision, and continue to build their portfolios for college/employment opportunities, toward the minimum requirement of a 10-piece collection for most design schools. Also, students will have the opportunity to plan an end of year fashion showcase.

Interior Design 161 is a hands-on introductory course designed to help students develop skills in building client relationships, using elements and principles of design to achieve a desired mood, creating 2D & 3D floor plans, selecting and arranging furniture to enhance a space, coordinating appealing color schemes, budgeting for each project, and presenting designs. Current trends in decorating are discussed. Many projects are completed in class, including a Bedroom Design Project and an Urban Condo Project.

This laboratory course is designed to help students learn advanced interior design skills to enhance their ability to design various types of spaces. Design projects will include: Sustainable Design, Kitchen & Bathroom Design, Retail Store Design, and Home Design.
